Ingredients for dough:
- 7g dried yeast
- 2 tbsp wate
- 1 pinch sugar
- 200g plain flour
- 2 tbsp oilive oil
- ½ tsp salt
Ingredients for topping:
- 300g big white onions finely sliced into rings
- 100g cheese freshly grated
- 1 tsp dried oregano
- 4 tbsp olive oil
- Some salt and some freshly gound black pepper
Method:
Stir yeast, water and sugar in a small bowl and set aside for about 10 minutes until bubbling.
Mix the yeast mix with flour, oil and salt. Slowly stir in the water and knead the dough on a well floured surface until smooth and elastic.
Put the dough inside a bowl and cover with a kitchen cloth. Set aside in a warm place and let rise until the dough volume is doubled.
Knead the dough on a floured surface strongly and place in a thin layer on a lightly oiled small baking tray.
Brush with 1 tbsp olive oil, arrange the onion rings and spread with cheese and oregano.
Sprinkle with 4 tbsp olive oil and bake in a preheated oven (225ºC) for about 25 minutes until crispy golden brown.
Serve immediatly, sprinkle with a little salt and a lot of freshly ground black pepper.
